This show-stopping festive layered Jell-O cake is the perfect side dish for a patriotic celebration! The red, white, and blue layers are bright and fun for a firecracker of a dessert on your table perfect for the 4th of July or Memorial Day. Or change up the colors to create something unique for a sports team, graduation, or other holiday. This eye-catching treat is easy-to-make and perfect for kids.
Unfortunately, I got a little distracted and reversed the colors. I had intended to do red, then white, and then blue. But hey, red, blue, and white still gets the point across.
2 (3 oz) boxes strawberry Jell-O
1 (3 oz) box lemon Jell-O
8 oz cream cheese, room temperature
8 oz whipped topping, thawed (like Cool Whip)
2 (3 oz) boxes berry blue Jell-O
Lightly coat a cake pan of your choice with non-stick cooking spray. (Alternatively, you can use a 9x13-inch baking dish.)
Prepare the strawberry Jell-O according to the directions on the box. Pour into the prepared pan and place in the refrigerator. Allow to chill until firm, about 1 hour.
Prepare the lemon flavored Jell-O using 2 cups of boiling water. Use a handheld electric mixer to beat the cream cheese slightly and then add the lemon Jell-O mixture. Beat the Jell-O and cream cheese until smooth. Set aside and allow to cool to room temperature.
Once the cream cheese mixture has cooled completely, gently fold in the whipped topping until mixed thoroughly. Pour the lemon mixture over the firmly set strawberry layer. Return to the refrigerator and chill until firm, about 1 hour.
Prepare the berry blue Jell-O according to the directions on the box. Set aside and allow to cool to room temperature. (Ensure the berry blue Jell-O is completely cooled, otherwise it will leak into the other layers.) Gently pour the cooled berry blue Jell-O on top of the lemon cream cheese layer. Return to the refrigerator and chill until the top layer is firm, several hours or overnight.
Once the Jell-O is firm, place a serving platter over the top of the cake pan. Carefully flip the cake over onto the platter, tap on the bottom of the cake pan, then lift the pan off. Serve immediately, or return to the refrigerator.
