With all the flavors of an apple pie, this soft and fluffy sweet bread is the definition of fall bliss. With a layer of apples and cinnamon sugar in the middle and another layer on top, this quick and easy bread tastes and smells like apple pie and is perfect for breakfast, dessert, or as a snack.

Apple Pie Bread
½ cup light brown sugar, packed
2 tsp apple pie spice
¾ cup granulated sugar
½ cup salted butter, softened
2 large eggs
2 tsp pure vanilla extract
1 ¾ cups all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup full-fat buttermilk
2 cups peeled, cored, and chopped apples (Granny Smith, Gala, or Honeycrisp)
Directions
Apple Pie Bread
Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.
In a small bowl, mix together the brown sugar and apple pie spice; set aside.
In a large bowl, use an electric mixer to beat the granulated sugar and butter together in until smooth and creamy.
Beat in the eggs, one at a time, scraping down the sides of the bowl and beating well after each addition. Then add in the vanilla.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the flour mixture into the butter mixture and beat until just incorporated. Then add the buttermilk and mix until combined.
Pour half of the batter into the prepared pan. Add half of the apples in an even layer on top of the batter, and evenly sprinkle the apples with half of the reserved brown sugar spice mixture. Lightly press the apple mixture into the batter using your hands or a spoon. Pour the remaining batter over the apple layer, then top with the remaining apples and brown sugar spice mixture. Lightly press the apple mixture into the batter.
Bake the bread for 40-55 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
