Fresh Peach Danish Pastries

Everyone knows Danish pastries are the quintessential breakfast food. Paired with fresh peach slices, a creamy honey vanilla mascarpone filling, toasted slivered almonds, and a buttery puff pastry, these Danish pastries are perfect for breakfast or brunch with family or friends. With a flaky crust, rich filling, juicy fruit, and nutty topping, this easy recipe is a beautiful addition to any menu and is a great way to use fresh summer peaches. Nothing could go wrong on a day that starts with these Danish pastries.
These peaches were from our peach tree, so the peaches were very small. The recipe is written for standard sized peaches from a grocery store.
Makes 6 Danish pastries
Ingredients
Fresh Peach Danish
6 Tbsp mascarpone cheese
2 Tbsp honey
½ tsp pure vanilla extract
1 sheet frozen puff pastry, thawed
24 fresh peach slices
¼ cup slivered almonds
1 large egg
1 Tbsp water
Directions

Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a medium bowl, mix together the mascarpone, honey, and vanilla until thoroughly combined.
Gently unfold the thawed puff pastry sheet onto a lightly floured surface and roll it out into a 10"x13" rectangle about â…›-inch thick. Then cut the sheet into 6 equal rectangles.
Lightly score each puff pastry piece by drawing a smaller rectangle within each piece. This creates an edge around the outside of each pastry that will puff up and hold the filling inside.
Use a fork to prick the middle of each puff pastry piece several times to prevent it from rising.
Spread about 1 tablespoon of the mascarpone mixture inside the smaller rectangle in the center of each puff pastry piece.
Finish by topping the mascarpone mixture on each puff pastry piece with 4 fresh peach slices and sprinkle with slivered almonds.
Make a simple egg wash by beating the egg and water together, and then brush the egg wash around the outer edge of each puff pastry piece.
Bake for 15-20 minutes, until the pastries are set and golden brown.
Allow the pastries to cool on wire racks to room temperature and enjoy!
