Today we celebrated Sasha's 3rd birthday! Sasha is a Native American Indian Dog, and her brother, Shadow, is a 10-year old Wooly Siberian Husky. As you can see, they were so excited they could barely wait for us to take the paper liners off before devouring these tasty treats!
Makes 10 pupcakes
Ingredients
Apple Pumpkin Pupcakes
1 cup all-purpose flour
⅓ cup old-fashioned rolled oats
1 tsp baking powder
1 tsp ground cinnamon
¾ cup pumpkin puree
⅓ cup Greek yogurt
2 large eggs
2 Tbsp pure maple syrup
¾ cup shredded apple
Maple Cream Cheese Frosting
8 oz cream cheese
1 Tbsp pure maple syrup
Directions
Apple Pumpkin Pupcakes
Preheat oven to 350°F. Line a standard muffin tin with paper or silicone cupcake liners.
In a small bowl, whisk together the flour, oats, baking powder, and cinnamon.
In a medium bowl, whisk together the pumpkin puree, yogurt, eggs, and maple syrup until combined.
Add the dry ingredients to the wet ingredients and mix until evenly moistened. Then gently fold in the shredded apple.
Evenly divide the batter among the cavities of the prepared pan, filling the cups about ¾ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cakes from the muffin tin and cool completely on a wire rack before frosting.
Maple Cream Cheese Frosting
In a small bowl, use an electric handheld mixer to beat the cream cheese and syrup until light and creamy.
Pipe or spread the frosting on top of the cooled pupcakes and decorate as desired. Then let your pup enjoy!
