Homemade Star Crunch Cookies

Feeling nostalgic?! Whip up a batch of these addictive no-bake cookies to satisfy your sweet tooth. With just 5 ingredients, this copycat Little Debbie recipe is super simple and gluten-free. Sweet and loaded with chocolate with a hint of caramel, these out-of-this-world cookies are full of flavor and texture. Made with creamy milk chocolate, gooey caramel, and crispy rice, these chewy yet crunchy cookies are like a Rice Krispies Treat meets a candy bar.

Chocolate Caramel Star Crunch Cookies

Makes 10 cookies


Star Crunch Cookies

  • 5 oz milk chocolate chips

  • 8 oz soft caramels (I used Kraft)

  • 4 Tbsp salted butter

  • 3½ cups mini marshmallows

  • 3½ cups crispy rice cereal


Star Crunch Cookies

  1. Place the chocolate chips, caramels, and butter in a medium saucepan and heat on medium until melted and smooth, stirring constantly.

  2. Add the marshmallows and stir together until the marshmallows are melted and the mixture is smooth.

  3. Add the rice cereal and stir together until the cereal is evenly coated. Set the mixture aside to cool slightly for just a few minutes.

  4. Spray a ⅓ cup measuring cup and your hands with nonstick cooking spray.

  5. While the mixture is still warm, scoop the mixture by ⅓ cup scoops and roll each scoop into a ball. Place the balls on a parchment-lined baking sheet and then flatten into discs using the back of the measuring cup. (Make sure you spray the back of the measuring cup with nonstick cooking spray.)

  6. Let stand at room temperature until fully set, about 1 hour. Store any leftovers in an airtight container with a sheet of parchment paper between each layer to prevent sticking.
