Patriotic Berry Brownie Pizza for the 4th of July

Ingredients

Brownie Crust

  • ¾ cup unsalted butter, melted

  • 1½ cups granulated sugar

  • 2 tsp pure vanilla extract

  • 3 large eggs

  • ¾ cup unsweetened cocoa powder

  • ¾ cup all-purpose flour

  • ¼ tsp baking powder

  • ¼ tsp salt

  • ⅓ cup mini semisweet chocolate chips

Cream Cheese Whipped Cream

  • 1 (8 oz) package full-fat cream cheese, softened

  • ½ cup granulated sugar

  • 1 tsp pure vanilla extract

  • ¾ cup heavy whipping cream

Fruit Toppings

  • ½ cup fresh raspberries

  • 1 cup fresh strawberries, sliced

  • ½ cup fresh blueberries

Directions

Brownie Crust

  1. Preheat oven to 375°F. Line a 12-inch round pizza pan or a large cookie sheet with parchment paper or spray with nonstick cooking spray.

  2. In a large bowl, whisk together the butter and sugar until smooth, about 2-3 minutes.

  3. Add the vanilla extract and eggs and whisk until combined.

  4. Add the cocoa powder, flour, baking powder, and salt and whisk until just incorporated, ensuring not to overmix the batter.

  5. Using a rubber spatula, gently fold in the chocolate chips. Pour the batter onto the prepared pan and spread evenly to the edges with an offset spatula.

  6. Bake for about 15-18 minutes, or until a toothpick inserted into the center comes out with a few crumbs. (It’s better to pull the brownies out early so they’re fudgy, than to leave them in too long to dry out.)

  7. Allow the brownie to cool completely before decorating.

Cream Cheese Whipped Cream

  1. Using a handheld electric mixer, beat together the cream cheese, sugar, and vanilla until smooth. Add the whipping cream and beat until stiff peaks form. Scrape down the sides of bowl as needed.

  2. Spread the cream cheese whipped cream on top of the cooled brownies.

  3. Decorate with sliced strawberries, raspberries, and blueberries as desired.

  4. Chill until ready to serve and then cut into wedges.
